In Ukraine, there are dozens of recipes for borscht. This is the main traditional soup of Ukrainian cuisine, prepared in all its regions and internationally recognized. Just as sushi is immediately associated with Japan and curry with India, borscht is a symbol of Ukrainian culinary culture.
 

Ksenia prepares a "thick" version of borscht, very close to how her grandmother used to cook it in a clay oven in the village of Velyka Sevastyanivka, Cherkasy region of Ukraine.


We make two versions of borscht: with beef and a leaner version with chicken.

Ingredients: chicken or beef, beans, beets, potatoes, cabbage, carrots, onions, tomato paste, salt, black pepper, bay leaf, dill or cilantro, garlic, sunflower oil, sour cream - for serving.


Borscht is traditionally served with sour cream and pampushkas garnished with herbs and garlic.
